What Makes a Smash Burger Different From a Regular Burger

Karachi has no shortage of burger places, and most of them serve some version of the same thing: a thick, evenly-cooked beef patty, griddled or grilled, stacked between a bun with the usual toppings. A smash burger is a different animal โ€” same beef, completely different result โ€” and the difference comes down to one step: what happens the moment the patty hits the heat.

The technique, in plain terms

A regular burger patty is shaped ahead of time and cooked gently, so the inside stays tender but the outside barely browns. A smash burger starts as a loose ball of beef mince that gets pressed โ€” hard โ€” onto a screaming-hot griddle. That pressure spreads the meat thin and forces it into direct contact with the surface, which triggers the Maillard reaction: the browning that gives seared meat its deep, savoury crust.

The result is a patty with a thin, lacy, deeply caramelized edge and a juicy center, cooked in a couple of minutes flat. It's less about the size of the burger and more about that contrast โ€” crisp against soft โ€” in every bite.
